Vegan Tofu "Ricotta" Filling
Preparation: 10 minutes
Makes 3 cups
- 1 lb hard Chinese-style tofu, drained, squeezed and crumbled
- 1/3 c. olive oil
- 1 tsp salt
- 2 cloves garlic, crushed)
- 1/4 small onion, finely minced
- 1 tsp basil
- 1 tsp oregano
- Mix tofu and all other ingredients in a bowl.
- Toss well and adjust seasoning if desired.
Use anywhere a ricotta-style savoury filling is called for.If you have comments or suggestions,
