Vegan Roasted Pumpkin Seed
Preparation: 90 minutes
- Seeds from one pumpkin
- 2 T vegetable oil
- Salt or seasoning to taste
- Rinse the seeds in a colander (they'll be slimy)
- Dry seeds on a towel for 30 - 60 minutes
- Preheat oven to 350F and grease a cookie sheet
- Toss seeds with oil and seasoning
- Spread seeds out on the cookie sheet
- Bake for 30 minutes or until golden
- Stir every few minutes to prevent burning
