vegan Minty Slushy
Preparation: 15 minutes
Serves 4
- 1 banana
- 6 mint leaves
- zest of 1 lime
- 1 c. soy milk
- 1/2 c. ice cubes
- Purée the banana in a blender.
- Add the rest of the ingredients and blend until slushy.
- Pour into Margarita glasses, garnish with some extra mint and serve.
A great post-workout refreshment, afternoon pick-me-up
or cool breakfast on the go!
