vegan Melon and Ginger Shake
Preparation: 15 minutes
Serves 2
- 1/4 honeydew melon
- 1 T fresh ginger, minced (or crystalized ginger)
- 1 c. soy or rice milk
- 1/2 c. ice cubes
- Crush the ice in a blender.
- Remove the ice and set aside.
- Add the melon and ginger and blend until smooth.
- Add the crushed ice and soy milk and blend until desired consistency.
- Pour into Margarita glasses, garnish with some extra mint and serve.
A great post-workout refreshment, afternoon pick-me-up
or cool breakfast on the go!
