Cranberry-Apple Cider Vegan
Preparation: 30 minutes
Makes 2 litres (Serves 8)
- 4 to 5 c. fresh cranberries
- 8 c. apple cider (or juice)
- 1/2 c. fruit sweetener or 1/4 c. sugar
- 2 cinnamon sticks
- 1 orange, sliced into rounds
- Combine cranberries with 2 cups of the apple cider in a saucepan.
- Cook on medium heat for 5 to 7 minutes or until berries are soft.
- Blend in a blender and then strain through a cheese cloth.
- Transfer juice back to a saucepan and add remaining ingredients.
- Simmer, covered, for another 20 minutes.
- Serve warm.
