Vegan Carrot and Apple Soup
Preparation: 30 minutes
Serves 2 - 4
- 8 oz cooking apples
- 1 lb carrots
- 1 onion, peeled
- 1 tsp canola oil
- 1 T vegan margarine
- 4 c. water
- croutons
- chives
- Peel, core, and chop the apples.
- The carrots can be left unpeeled if they are young but it is preferable to peel them if they have a thick skin. Chop the carrots and onion.
- Combine the oil and margarine in a large pan.
- Add the onions, carrots and apples and stir for 5 minutes.
- Add 4 cups of water and bring to a boil.
- Simmer for 15 minutes.
- Puree the soup in a food processor.
- Serve with croutons and chives.
