Apple Cake Lacto
Preparation: 60 minutes
Serves 10
- 1 T unsalted butter
- 1/2 c. sugar
- 1 c unbleached flour
- 1 c. whole wheat pastry flour
- 1 tsp baking powder
- 1 tsp baking soda
- 1/4 tsp salt
- 1 tsp ground cinnamon
- 2 T vegetable oil
- 1 c. yogourt
- 1 T cornstarch dissolved in 2 T water
- 1/3 c. unsweetened applesauce
- 1 tsp vanilla extract
- 2 c. peeled, diced apples
- 2 T ground nuts
- 1 T brown sugar
- 1 tsp ground cinnamon
- 1/2 tsp ground allspice
- Preheat oven to 375F and grease a spingform cake pan.
- In a bowl, beat together the butter and sugar until the mixture is the consistency of coarse sand.
- Add the flours, baking powder, baking soda, salt and 1 tsp cinnamon.
- In a separate bowl, beat together the oil, yogourt, cornstarch mixture, applesauce and vanilla.
- Pour the wet mixture, and a third of the diced apples onto the dry mixture and stir everything together gently with a spatula until the flour is moistened (do not beat).
- Pour the batter into a pan.
- Spread the remaining apples on top of the batter.
- In a separate bowl or cup, mix together the nuts, brown sugar, cinnamon and allspice.
- Sprinkle the spice mixture on top of the apples.
- Bake for 40 to 50 minutes, unitl the cake is firm to touch in the centre.
- Cool the cake in the pan for 10 minutes, and then loosen the side and unmold the cake.
- Serve
Serve plain or with fresh fruit and cream.
